Ingredients

12 Makes*

2 cups Black & Gold self-raising flour

1 1/2 cups Black & Gold milk

1 1/2 cups Black & Gold grated cheddar cheese

60 g Black & Gold bacon, chopped

*Serving size calculator is approximate, feel free to adjust by adding a pinch here and there as needed

Method

Preheat oven to 180 ̊C.
Line a 12-cup muffin tin with paper cases.
Heat up a frying pan with a splash of oil and add the bacon. Once cooked, remove to cool.
Add flour to a large bowl and make a well in the middle, pour in milk, cheese and two thirds of the bacon.
Season generously with sea salt and cracked pepper.
Gently fold until just combined.
Spoon evenly across the muffin cases and place a little of the remaining bacon on top of each.
Bake for 25 minutes or until the muffin tops are golden brown.

I made these and really enjoyed them straight out of the oven.
I found them a little dense when cold latter in the day. I think next time I will sift the flour and a little baking powder.

    I did actually sift first and
    Added a pinch of baking power and added extra cheese I did mine in the pie maker.
    Lunches for work I have always done in the pie maker zucchini slice etc
    These were still quite dense and taste better with a 15sec zap in the microwave

Cooked mine in the Pie Maker
Great hot, cold need a bit of a 15sec zap
I sifted the flour first and added a pinch of baking power and they were perfect
