Ingredients
- 1 kg Desiree potatoes
- Salt, to season
- 50 g butter
- 150 g crème fraiche
- 250 g tasty cheese, grated
- 250 g mozzarella cheese, grated
- 4 good quality sausages, cooked to serve
- Green salad, to serve
Method
- Peel the potatoes and cut into large chunks. Place the potatoes into a large saucepan and cover with cold water. Season the water with a generous pinch of salt, then bring to the boil over high heat. Reduce the heat to a simmer over medium heat. Cook, for 20-30 minutes, or until a small knife can be inserted into the potato chunks and removed easily.
- Drain the potatoes into a colander, then return the pan to low heat. Use a potato ricer to crush the potatoes directly into the pan. Add the butter and crème fraiche and use a spatula to combine well. Add the grated cheese gradually, beating well after each addition, until the cheese is melted. The mixture should be stretchy and smooth.
- Season the mozzarella mash well with salt, to taste. Serve the mash with cooked sausages and a green salad, to your liking.
